Did you know you can make banana bread in the blender? Well, you can and it is delicious!
We go through a lot of bananas at my house. All 3 of my kids love them and it works out well. One kid likes them practically green, so they “crunch” when she chews them. Yuck! Another likes them yellow but with NO spots. The other kid and my hubby like them yellow with a few brown spots. Me? I like them really ripe with big spots. Yum. But when we haven’t eaten them all and they get past that stage, they are too mushy and no one will eat them. So that is when they are perfect for banana bread!
This recipe is so easy to put together and the bread comes out moist and delicious.
Blender banana bread
Ingredients:
1 3/4 c. all-purpose flour
1 1/4 tsp. cream of tartar
3/4 tsp. baking soda
1/2 tsp. salt
3/4 c. sugar, plus 2 tsp.
1/2 c. canola oil
2 eggs
2 ripe bananas, sliced
1/2 c. chopped walnuts (optional)
Directions:
Combine flour, cream of tartar, baking soda and salt in a bowl. Set aside.
Combine the oil, eggs, 3/4 c. of sugar, and bananas in the container of electric blender. Blend at medium speed 30 seconds.
Stir the mixture into the flour mixture, mixing well.
Mix in the walnuts. I think the walnuts just add another layer of flavor and crunch that takes this bread over the top. Yum!
Pour the batter into a greased 9×5 loaf pan. Sprinkle the remaining 2 teaspoons of sugar on the top. This forms a nice crunchy top to the bread when done baking.
Bake at 350° for 45 minutes or until a toothpick inserted in the center comes out clean.
My family’s favorite way to serve this is warm with butter or cream cheese. Delicious.
