Looking for a fast, delicious weeknight meal that the whole family will love? How about a corn and chili mix on a mozzarella-stuffed crust?
Stuffed crust chili pizza? Yes, please!
I stumbled across this recipe for stuffed crust chili pizza many years ago when I bought one of those little recipe books by Pillsbury that you see in the grocery checkout line. I don’t have the recipe anymore, but I have created my own version, and my family loves it. The pizza is done in under 30 minutes, and paired with a salad, you’ve got a filling and delicious weeknight dinner.
Here are the stuffed crust chili pizza ingredients:

1 can refrigerated pizza dough
15 oz. can chili (I use Hormel with meat and beans)
1 can corn, drained
6 pieces mozzarella string cheese
1 c. (or so) of shredded colby-jack cheese
Directions:
Grease an 8.5 x 11 pan.
Unroll the pizza dough into the pan and push it up the sides of the pan.
Lay the pieces of string cheese on the dough to form a rectangle along the edges of the dish. There will be 2 pieces side by side on each long side, and 1 piece at each short side.
Fold the edges of the dough over the cheese and seal it to the bottom crust, so there are no gaps. (You don’t want the cheese to melt out.)
Prick the bottom of the dough a few times with a fork, so bubbles do not form in the crust.
Bake dough for 5 minutes at 425°. This prevents the crust from getting soggy when you add the other ingredients.
Meanwhile, mix together the chili and corn.
When the crust is done, take it out and spoon the chili/corn mixture into the center.
Sprinkle the mixture with shredded colby-jack. I used just under a cup.
Put the pizza back in the oven, still at 425°, for an additional 15 – 18 minutes, or until the cheese is melted and the crust is golden brown.
Let the pizza rest for several minutes before cutting it. Getting hot cheese stuck to the roof of your mouth is no fun!
How to serve your stuffed crust chili pizza.
I cut our pizza into 6 big slices, pair it with a yummy salad and it’s a filling enough dinner for my family of 5 – including 3 teens!
This stuffed crust chili pizza is such an easy weeknight dinner, and anything I can do to make dinner easier is a good thing in my book! 😉
